Spring is officially here! Even though it doesn't seem like it here in Ottawa, where the temperate is below freezing and the ground is still snow covered. Looking for a super simple appetizer? These Mexican Devilled Eggs are so easy to make and are filled with flavour. I have to admit that I've never really been a fan of devilled eggs. Basically whipped egg yolks with mayo didn't exactly call out to me. I don't like mayo in general but I knew there was a way I could change up the ingredients to make something super tasty. Plus I love eggs, (even though I'm intolerant, read below to see how I manage to continue eating eggs) so I knew that I could make devilled eggs into a great appetizer.
