Beetroot Hummus

Gluten-free, Dairy-free, Vegan

Just look at that colour! While admittedly I'm more of a guacamole girl, this hummus really hits the spot and is loaded with nutrition. Plus, anytime my food is a bright pink (and not from nasty food colouring) is a win in my books! This will make a wonderful addition to your long weekend party plans and will have everyone raving. Why not kick off the summer with this colourful and tasty dip!
This hummus is loaded with fibre, protein, magnesium, and zinc. It is great served up as a dip with raw veggies or as a nice spread in a collard green wrap for a quick and easy lunch. 
Ingredients​
  • 2 medium beets (cooked)
  • 1 can chickpeas (398ml)
  • 1 garlic clove
  • 1/4 cup tahini
  • Juice of one lemon (approximately 4 tbsp)
  • pinch of sea salt

Method
Add all ingredients to a food processor or high speed blender. Whirl away until fully combined and smooth. That's all folks, nice and easy! Store in refrigerator.
