This buddha bowl is the perfect summer lunch! With this heat wave, I am craving fresh, and cooling meals. The sesame ginger dressing really adds kick of flavour as well!
I love a good buddha bowl! Mostly because it's just a fancy salad, but salads can get a bit boring. Mix it up with this buddha bowl! Or make it your own with different veggies and protein options. You can easily make a buddha bowl vegetarian or not. I choose to do chickpeas this time, but will often use shredded chicken, tuna, or grilled steak. To be honest it's usually whatever I have in the fridge!
Ingredients
- In a small mixing bowl combine all sauce ingredients and stir to combine - Prep all your veggies and layer into a bowl with your protein of choice - Drizzle sauce over top and sprinkle on sesame seeds, cilantro and chives
