Chocolate Chip Cookie Dough Bars

Ok, confession time. I'm obsessed with all things chocolate chip cookie dough.  I mean, it just doesn't get better than that right? 

These bars have all the comforts of a cookie dough treat but have been leveled up with omega 3 rich ingredients, walnuts and ground flax seeds. Plus all powerful hormone balancing, stress reducing goodness of maca powder. 
Perfect for a snack on the go or with a cup of tea. Side note, how beautiful are these tea cups?! These were my Grandmother's and passed on to me. The gorgeous flatware was given to us from my Hubby's Grandmother, just look at that detail! And to top it all off, the lace is actually an apron that was my other Grandmother's. Grandmas for the win, am i right? ​

Chocolate Chip Cookie Dough Bars

Ingredients
  • 4 Medjool dates
  • 1 cup walnuts
  • 1 cup cashews
  • 1 tbsp. maca powder
  • 2 tbsp. ground flax seeds
  • 3 tbsp. mini dark chocolate chips (or chopped chocolate bar)
  • pinch of sea salt

Add walnuts, cashews, maca powder, ground flax seeds, and sea salt into a food processor, pulse until it is a "flour" consistency. Add in dates and mix until a dough forms. Add in chocolate chip and pulse until fully combined. 

Transfer dough to a loaf pan (12 x 6) and firmly press down. Chill for 20 minutes. Cut into bars and enjoy! Store in refrigerator.
