Dairy-free Caeser Dressing

Creamy caesar salad dressing? Yes please! Caesar salad was one of my favourites growing up, probably because it was drenched in cheese and had limited vegetables which my 10 year old self thought was pretty awesome. While my views on veggies have changed and now you can't name a vegetable that I don't like, I still love the savoury deliciousness of caesar salad. Being dairy-free for over almost four years now, I'm so happy to have an alternative for this tasty salad. Why didn't I make this recipe up years ago?! 
The best part? It's a super simple recipe! Basically, add all the ingredients to the blender and whirl away until smooth. Ta-da, a thick, creamy dairy-free caesar dressing! Mix up a simple salad and serve along side a big ol' bowl of zoodles with bolognese sauce. Trust me, it will become one of your go to meals. 
Ingredients
  • 1 cup cashews (soaked overnight)
  • 3/4 cup olive oil
  • 1 tsp anchovy paste
  • 2 tsp capers
  • 2 tbsp nutritional yeast
  • 3 cloves garlic
  • sea salt and pepper to taste

​Method
​Soak cashews in water overnight. Drain, then add to high speed blender. Add in remaining ingredients and blend until smooth. You may need to use a tamper to assist with blending. Add water as needed to blend and create desired consistency. I like it a little thicker so I tend to skip the water all together. 

Store in refrigerator for 4 - 5 days.
