Gingerbread Overnight Oats

It's officially December so that means that it's everything Christmas themed from now on, right?! Let's just pretend that I haven't already been blasting the Christmas carols and decorating the house since November 1st. While the colder days usually has me craving a warm breakfast, it's nice to have something ready made in the fridge that I can just pop out and enjoy without thinking. Especially because that means that I get to wake up and feel like I'm eating gingerbread cookies for breakfast!  This also makes for great on-the-go snack.

​The flavours of gingerbread always brings me back to childhood memories of my mom making hundreds of gingerbread cookies (literally hundreds) and decorating them to look like me and my 3 siblings. She iced them with all our features, complete with the right hair colour, style, eye colour and even dressed in our favourite PJs. Talk about super mom!! Needless to say gingerbreads hold a special place in my heart. I've since health-ified her cookie recipe (coming to the blog soon) but sometimes you want all the flavour of a dessert without actually having the dessert. Enter overnight oats! This is a super simple recipe that comes together in no time. The recipe is for one serving but you could easily double or triple it so that you have breakfast or snacks prepared for a few days.


Ingredients
  • 1 cup rolled oats
  • 1 cup dairy-free milk (I use cashew milk, find the recipe here)
  • 1 tbsp chia seeds
  • 1 tbsp honey or maple syrup
  • 1 tsp blackstrap molasses 
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon
  • pinch of ground cloves
  • Topping of choice (pumpkin seeds, cinnamon, hemp hearts, cranberries etc.)

Method
Stir all ingredients together in a mixing bowl until fully combined. Pour into a small mason jar (or Tupperware), place on the lid and store in the fridge overnight. Your tasty breakfast will be ready and waiting for you in the morning! Double or triple the recipe and divide evenly into separate containers and you'll have an easy breakfast or snack ready for you whenever needed!

This is a healthy food this weekend and people will eat this in the afternoon. Oats are used in a person's diet and we can see it in everybody's diet. People will be waiting for more foods to be displayed in this blog. They will wait patiently and will be happy to eat it when they got home. I will prepare this for the upcoming family dinner this Saturday. They will be surprised with the taste of it.
