Peach season is coming to an end and I couldn't let it go by without creating a little something for you guys. I must say that these popsicles are definitely peachy keen! I can never resist a god pun. These popsicles are so creamy and so easy to make! Think of a orange creamsicle but with peaches (way better in my opinion), and with MUCH cleaner ingredients.
As August is coming to a close, I'm clinging onto summer as much as possible with recipes like these! I do love fall but there is something kinda special about soaking up the last little bit of summer with super fresh and bright treats. I'm just not ready to trade in my sundresses and fruity desserts for cardigans and pumpkin spice lattes, cookies, pies, muffins, cupcakes, energy bites, and the list goes on! Full disclosure, I will be spamming my blog with pumpkin spice recipes! ;)
I love creating recipes that are as easy as throwing everything into a blender, giving it a quick whirl, and calling it a day. That's basically it for this recipe. The hardest part is waiting for them to freeze.... tick tock, tick tock.
I use honey to sweeten these peach popsicles but that can easily be substituted for maple syrup.
- Soak cashews in water for 4- 6 hours. Rinse and strain.
- In a food processor or blender, add all ingredients and blend on high until fully combined and smooth. You may have to use a tamper in your blender or take breaks with a food processor to scrape down the sides.
- pour into popsicle molds and freeze until frozen through.
- Run under hot water for a couple seconds to loosen the popsicles, remove from mold and enjoy!
