Just in time for Thanksgiving, this paleo, raw, vegan pumpkin pie is sure to impress all your guests! Thanksgiving is one of my most favourite times of the year, and it's not just because it usually falls on my birthday (but that does help). Thanksgiving is all about food and family, two things that are very important to me. Plus, Thanksgiving is a typically a very easy meal to make gluten or grain free, dairy-free and in my case, egg-free. Desserts are where is gets a little tricky but that's where this pie comes in. Trust me, it won't disappoint!
Having a severe intolerance to eggs and dairy means that traditional pumpkin pie is a definitely no-go for me. But I knew there had to be a way to still enjoy the deliciousness of this festive pie without the dairy, eggs and I ditched the refined sugar and gluten just for good measure.
Best of all? It's super simple to make. All you need is a food processor or a high speed blender. I used my vitamix for for the crust and filling. It works perfectly and really cuts down on the dishes!
Add the pecans, cinnamon, flax seeds and salt into a food processor or high speed blender. Blend until fully and even ground to small pieces. Do not blend into a powder. Add dates one a time and continue to blend of a medium/low speed. You may need to use the tamper or stop occasionally to push the side of the mixture down. Once fully combined, you should have a crumbly mixture that will easily stick together when pressed into your pie dish. Transfer mixture to a pie dish, I used a 9 inch tart pan. Place crust in fridge.
Add soaked cashews into the blender or food processor. Blend until a creamy texture has formed. Add the pumpkin puree, vanilla, and spices, Blend on high until fully combined. Add dates one at a time until fully combined and smooth. This will require some time and you may have to stop occasionally to scrap the sides down. If you're using a vitamix, or blender, use the highest speed and use your tamper to assist.
Spread the filling evenly over the crust and refrigerate until ready to serve. This pie is an easy dessert to whip up and will be a hit with all your guests, health nut or not!
