This shredded chicken is a must for all your meal prep days. It's so easy to make, can be used in many different recipes and is so flavourful. Now, when I say boiled chicken many people will be thinking, "say whaaaat?" but I promise you that this chicken is tender and juicy. It's great to have on hand as it can be transformed into many different recipes and is a quick and easy protein.
Shredded chicken is at the base of many of my weeknight meals because if I already have it cooked and ready to go in the fridge than I know I can use it to create a variety of meals by simply mixing it with a different sauce or seasoning.

Bring salt and water to a boil. Add chicken and boil until fully cooked, approximately 20 minutes. Remove from heat and while still warm, take chicken out of the water and shred into small pieces with 2 forks.
Store in the fridge for up to 4 days.
