Paleo, vegan, keto, dairy-free
Is there a better dip than spinach and artichoke? Not in my mind! I love a good spinach and artichoke dip with veggies but after going dairy-free a few years back (about 5 years now), I figured that I'd have to give that up too. But this is just as good as the real deal, maybe even better!
Need to go dairy-free? Enter the cashew. I use cashews for the base of many of my dairy-free recipes. The taste is mild enough that it will take on whatever flavour you add to it, sweet or savoury. If you're sensitive to nuts than I would recommend using sunflower seeds instead. They make for a great dairy-free substitute as well.
I love serving this dip up with fresh veggies but your favourite gluten-free crackers or bread would be tasty too!
- In a high speed blender or food processor, blend soaked cashews, lemon juice and water until creamy
- Add artichoke and spinach and pulse until artichokes are completely broken down into small pieces
- Add remaining ingredients and blend until fully combined
- Serve with fresh veggies or your favourite chips
