Happy New Year everyone!The holidays are officially over and I have to admit that it's nice to get back into the swing of things. After many servings of turkey dinner over Chirstmas, I was somehow still not yet sick of it and decided to make a turkey dinner on New Years Eve for the hubs and I. Great idea and it was delicious but a whole turkey between two people is A LOT of turkey. We did the usual leftovers the next day (even better than the real deal in my opinion), and then I got straight to boiling the bones for broth. You can find my bone broth recipe here. With a large turkey I was able to make 3 batches of broth! Talk about cost effective.I froze the first batch of broth to use a later time and made both the 2nd and 3rd batches into this turkey soup. This time of year is great for warming foods. And just because it's comfort food doesnt mean it's bad for you! Just the opposite in fact, this soup is loaded with nutrients and best of all, it's a super simple, one pot, kinda meal and really hits the spot. Who says turkey is just for the holidays?! I have another turkey in the freezer and plan on cooking that baby up in the near future.
